A TRADITION OF COOKING
Since the very beginning Lozerians have taken from the rough environing nature its obstinacy and its precious resources. Through centuries has thus been transmitted an ancestral knowledge which still lingers nowadays in some treasured recipes such as pouteille, coupétade, aligot, cabbage sausage from Langogne (moche), salted or dried pork products, rye bread, cheese of all kinds, be it from cow-milk, ewe or goat milk, honeys from the chestnut trees, heather, or from the wild mountain flowers, and blueberry or cranberry jam.

Aligot, truffade, ... The truffade, a flavour from old times, subtle mix of roasted potatoes and fresh cheese.
